Everybody loves peanut butter and Peanut Butter Cookies too! These Cookies are really easy to make and will please both family and friends. They only take 15 minutes to prepare and you can serve them in no time. Not only are they thrown together in a matter of minutes, but the ingredients should be in 95% of store cupboards across the country. No need for any occasion for these, they offer sweet solace no matter what! And they are gluten free which is a great incentive for those with gluten intolerance.
Peanut Butter Cookies

- 2 cups (500 ml) smooth peanut butter
- 240 g sugar
- 2 eggs
- 2 tsp (10 ml) bicarbonate of soda
- ½ tsp (2.5 ml) salt
Preheat the oven to 175 °C.
Mix the peanut butter and sugar together in a mixing bowl.
Add the eggs, bicarb and salt. Roll into small balls about the size of a walnut (2.5 cm).
Make sure there is plenty of space for the balls to spread into biscuit shapes on the baking tray.
Bake for 10 minutes until the edges are set.
Let them cool on the baking tray, and then enjoy!
Chefs Tip. Make a double batch so you can freeze the cookie dough. No need to thaw, just bake for an extra minute or two. You never know when a cookie emergency will rear its head. You might not have time to make cookies from scratch, but you’ll have frozen peanut butter cookie dough. That’s a lifesaver!
