Rum cocktails are not often associated with sophistication, especially in the category of tiki, the Hawaiian Eye breaks the mold. In reality there are quite a few elegant rum drinks, but mostly bars have relegated rum to the bottom rail and blender. So many rums, like vodka are made very quickly and then doused with flavorings. By paying a little attention and not being afraid of the rum aisle, which can be prodigious. However by looking away from Bacardi that are lot of great choices.
Rum for the Hawaiian Eye
For the Hawaiian Eye, I like to blend two rums. You wont find neither are expensive, and this blend makes a top shelf cocktail. First, Havana Club Puerto Rican Rum is a mellow and easy. Second, is Flor De Cana 4 year Extra Seco Silver, such a clean rum, not argument for this one. One final design tip, if you use Havana Club Gold rum its a yellow drink Havana Club Silver rum its clear like a martini! Both are column still rums, lightly aged, and are effectively the same rum. You wont find a lot of rum funk in these rums. Perfect for the Hawaiian Eye tiki.
One other note, we find the Hawaiian Eye is better with a bit of an ice slurry on top. for that reason shake the heck out of it, and don’t strain it overly well let some ice flakes though. I have a wide or loose hawthorn strainer that is perfect for this task. You will note the spring is not overly dense on this strainer. If you need one here it is on Amazon.
Finally I really like to serve this in a martini glass. Floating an edible flower in the center is an incredible presentation. Also from time to time I put a round ice ball in the center. It actually looks an eye!

Cruzan Single Barrel Rum, Flor de Cana 4 year Extra Seco Ron, John D Taylor’s Velvet Falernum, Lime Juice, Simple Syrup.

- 1 oz Havana Club Puerto Rican Rum (Gold or Silver depending if you want a yellow or clear drink)
- 1/2 oz Flor de Cana 4 year Extra Seco Honduras Rum
- 1/2 oz John D Taylor's Velvet Falernum
- 1/2 oz Lime Juice
- 1/2 oz Simple Syrup
Add all ingredients to a cocktial shaker with cracked ice.
Strain into martini glass through loose Hawthorn Strainer, allow a ice slurry on top.
Garnish with edible flower floated in the center, or a round ice cube.
