This is Elizabeth’s recipe which has travelled from Sweden to South Africa and from South Africa to England and finally to our followers around the world.
Some time ago when visiting Johannesburg, South Africa, I was lucky enough to find Amberhall Guesthouse which is located in the North Riding suburb of the city. I haven’t stayed anywhere else since. The property is really convenient for access to the city and has superb facilities for the traveller. All rooms are well appointed, comfortable and very luxuriously furnished. It is situated in a large tree filled grounds alongside a river. The plentiful local bird population are very melodic and wake you every morning. Natures joy and a great start to the day.
Elizabeth who owns the property is a fabulous cook and the breakfast at Amberhall is really inventive, fresh and tasty. It also changes every day. Elizabeth hails from Sweden and passed on this wonderful Pineapple Pie recipe. We love it.
- For the pie dough:
- 150g butter
- 100ml sugar
- 300 ml cake flour
- 1 teaspoon of baking powder
- For the Filling:
- 2 eggs
- 500 ml creamed smooth cottage cheese
- 200 ml of sugar
- 1.5 teaspoon vanilla extract
- 2 tins of crushed pineapple ( about 900g) - well drained
- 1 Fresh Pineapple cut into very thin slices for decoration (Optional)
Make the dough and push it into a pie dish.
Mix all the ingredients for the filling and pour into the dish.
Add the thin slices of fresh pineapple to decorate (Optional)
Bake in the oven, 175 °C, for about 55 min or until set.
Let it cool and decorate it with some fresh mint leaves before serving.
