Tzatziki Salad

Tzatziki Salad (from the Turkish word cacık), is a salad served with grilled meats or as a dip. Tzatziki is made of salted natural yogurt mixed with cucumbers, garlic, salt, olive oil, sometimes with vinegar or lemon juice, and some herbs like dill, mint, parsley, thyme etc. It is generally served as a cold meze.

One of the nicest Tzatziki Salad we enjoyed was at a little restaurant in the Turkish port of Kuşadası. Kusadasi is a beach resort town on Turkey’s western Aegean coast. A jumping-off point for visiting the classical ruins at nearby Ephesus (or Efes). The restaurant was just offshore on Pigeon Island which is a walled Byzantine castle that once guarded the town, connected to the mainland via causeway.

A salad bowl with tzatziki Salad will definitely become one of your favorites – especially if you like to eat fresh, healthy foods!

Ingredients

  • 1 cucumber Halved and sliced
  • 2 cloves of garlic minced
  • 1/4 cup extra virgin olive oil
  • 500 Gms Greek yoghurt
  • 1 tbsp of White Wine vinegar
  • 1 pinch of salt
  • 1 Tsp Cumin Seeds
  • 1 Pinch Ground Cumin

Instructions

Slice your Cucumber and place in the center of a clean team towel and squeeze all the juice out. This will stop the Tzatziki going watery when in the fridge

Add all your ingredients into a bowl and mix well

Leave to stand in the fridge for a minimum of half an hour

Add chopped Flat Leaf Parsley and serve

It combines a light version of the most popular Greek dip tzatziki, with cucumbers. This cucumber salad is perfect as an accompaniment for any summer meal, especially barbecues.

    I could never get this just right and now I realise where I am going wrong … I never squeezed the juice out. One of my favourites and from now on less soggy !
