You haven’t had chocolate muffins until you’ve made these triple chocolate muffins. This recipe is so simple and does not require a mixer! You have probably got most of the ingredients in the pantry. The keep in a sealed tin for a week and are very handy as a quick dessert or a snack with morning tea.
Triple Chocolate Muffins

Ingredients
- 2 cups Self Raising Flour
- 1 Pinch of Salt
- 3 eggs
- Half Cup Sunflower Oil
- 1 Cup Fresh Cream or Greek Yogurt
- 2 Cups chocolate chips (any roughly chopped chocolate will do!)
- Half Cup Caster Sugar
- 1 cup drinking chocolate powder
- For the topping
- 250 gm softened butter
- 1 cup cocoa powder
- ½ cup icing sugar
Instructions
In a bowl sieve Flour, Sugar, chocolate powder and Salt
Add the chocolate chunks and mix well so they are evenly distributed
In another bowl or jug whisk together the wet ingredients.
Add the wet mixture to the dry mixture and with a spoon and combine - Be careful not to over-mix or your muffins will be tough. A few figure eights with a metal spoon should do it.
Spoon into a greased muffin tin - should make approximately 12 medium Muffins
Bake for 20 to 25 min in the oven at 350f or 180c
For the topping
Beat together the butter, cocoa powder, and icing sugar to form thick paste - if to thick add a little hot water
Once the muffins have cooled top with the frosting
Put the kettle on and enjoy

Gluten Free
This recipe is very easy to change to a gluten free version. Just use gluten free flour, gluten free chocolate and gluten free chocolate powder. Most cocoa is gluten free but check the label.
