Three Minute Mayo

Who would have thought that Mayonnaise was so quick and effortless. Three Minute Mayo is SO easy to make, you can actually blitz it right in the jar you plan to keep it in. Good mayo is a must for any burger, salads and delightful with French Fries. As this Three Minute Mayo is so easy to make you have the opportunity to get creative with flavour. You can add crushed garlic to boost a burger or by adding course mustard to give a beef salad a lift. Depending on what you re serving by adding fresh herbs like tarragon to the mix makes a very interesting dressing. A dill mayo with a tuna sandwich its fabulous. As there are raw eggs in this sauce please make sure that your jar and your blitz equipment is scrupulously clean. I find a quick scald with boiling water does the trick.

Ingredients

  • 1 free range jumbo egg
  • 1 Tbsp (15 ml) white sugar
  • 1/2 tsp (2.5 ml) mustard powder
  • 1/2 tsp (2.5 ml) salt
  • 1/4 tsp (1.25) white pepper
  • 2 Tbsp (30 ml) white vinegar
  • 1 C (250 ml) sunflower or canola oil
  • squeeze of lemon juice, lemon zest, cayenne pepper (optional)

Instructions

Place the egg, sugar, mustard powder, salt, pepper and vinegar in a tall container or glass jar with a mouth big enough to fit hand-held electric blending stick.

Whizz for about half a minute or until all of the ingredients are well mixed.

Pour the oil in a steady stream with the machine running and continue to whizz until the mixture emulsifies and thickens.

Add a squeeze of lemon juice, some lemon zest and a sprinkle of cayenne pepper (optional) and whizz until well mixed.

Seal and store in the fridge until ready for use.

Wine Matching

An excellent all-around wine for brunch is Sauvignon Blanc.  The center of the wine is dry with a green flavor offering hints of citrus and stone fruit.  Perfect for a summer brunch.  Personally, I really like good French Sauvignon.  I think there is nothing wrong with a light flavorful beer for a brunch. Saison is arguably the Sauvignon Blanc of beer, dry, fruity, yeast gently balancing the hop and fruit.
