Summer Salad
A real winner for all the family
Ingredients
- For The Salad Dressing
- 30mls Olive Oil
- 1 green or red chilli
- 4 sprigs of coriander finely chopped
- For the Salad
- 450 gas watermelon
- 1 Mandarin Orange or Tangerine
- 80g baby pea shoots
- ½ mango, peeled and cut into blocks
- 100gm Feta cheese
- 100gm Pomegranate jewels
- 15gms roasted coconut shavings
- coarse salt for seasoning
- Black pepper for seasoning
Instructions
Salad Dressing
In a bowl, add the olive oil, chilli and coriander.
Mix and set aside
For the Salad
Cut the watermelon into triangle shapes and remove the pips
Keep a whole round slice of watermelon aside to serve the salad on
Remove the skin from the mandarin orange or tangerine and cut the segments into smaller pieces
Place the watermelon slice in the middle of the plate
Place a few baby pea shoots on top of the watermelon slice
Decorate the pea shoots with layers, starting with the watermelon
Repeat with the mango, Manderin orange, feta, pomegranate jewels and lastly a few more peas shoots
Sprinkle salad with the dressing and a few coconut shavings
Sprinkle with freshly ground pepper and coarse salt
Serve
Notes
If you can't get hold of pea shoots works equally well with rocket, watercress or baby salad leaves
