Tomato Soup

I love Tomato Soup!  Okay there it is.  The colour, the tart flavour the rich warmness.  In my book it’s stellar. This is possibly the easiest one I have ever made, mainly because of the genius soup maker.  you literal dump everything in the machine, and wait 18 whole minutes, and you have hot tomato soup.  seriously that is all. 

When I was at Marc and Ivan’s home last week Marc was eager to show off his soup maker.  I was unconvinced, perhaps skeptical is another way to put it.  What I know I don’t need is another kitten gadget taking up space in my cabinets.  On a cold Hampshire day he made amazing butternut squash soup.  It was so delicious and took less than 20 minutes.  Well, i was hooked, and upon returning home asked Amazon to bring me one. After a Prime wait of less than a day I had my soup maker.

This thing is genius, it is essentially a metal pitcher, with a heating element and blender blade.  It makes smooth, chunky and milk soups, as well as compotes and smoothies.  You simple fill it, plug it in, and push the desired button.  Trust me, it is worth the cabinet space. 

Try serving this tomato soup with grated cheese on top, like an aged cheddar or Romano, or sprinkle some Dukkah.  I always like to serve my tomato soup with crostini covered in cheese, and toasted.  For a full meal grilled cheese is always a winner with tomato soup.

Rich Tomato Soup

A simple rich and flavorful tomato soup

Ingredients

  • 1 large can San Marzano Whole Peeled Tomatoes
  • 1/4 cup of Wine
  • Water
  • 10 Fresh Basil Leaves
  • 10-12 Fresh Oregano
  • 4-5 Fresh Tarragon
  • 1/4 White or Yellow Onion
  • 2 Small or Baby Red Peppers
  • Pinch of Salt
  • 4-5 Grinds of Black Pepper

Instructions

Open the can of tomatoes.

Pour in the soup maker.

add everything else.

Fill to the "min" line with water

Put top on, plug in, turn on "smooth" setting

Eat in 18 minutes.

Notes

Try a sprinkle of Dukkah, grate hard cheese, or a dollop of sour cream. Serve with Crostini. Even better as a left over!
