Pork Chops grilled to perfection are a quick and easy meal any day of the week. By adding this quick and easy Butchers Sauce you can elevate the flavours to a restaurant quality meal. If you go the barbecue route the sauce will get rave reviews from family and friends alike. The sweet acidity in the sauce pairs really well with the Pork Chops We served the dish with steamed baby new potatoes ( our first crop of the year) and Green Beans | From the Breadbasket of Italy |. Personally I like to use Pork Loin chops that I ask the butcher to cut to about an inch thick and to trim the excess fat.
Pork Chops with Butchers Sauce
Capers and cornichons add briny flavour to this pesto-like sauce, brightening up the flavours of any grilled meat.
Ingredients
- 4 lean pork chops (I prefer Loin Chops)
- 2 tbsp olive oil
- 75ml/2½fl oz brandy
- 125ml/4fl oz white wine
- 500mls/ ¾ pint good-quality chicken stock ( I use a stock cube for this to save time)
- 2 banana shallot, peeled and finely chopped
- 1 tsp capers, finely chopped
- 2 tsp cornichons, finely chopped
- 2 dill sprigs, finely chopped (You can use 1 tsp of dried)
- 1 tsp finely chopped fresh chives
- 1 heaped tsp wholegrain mustard
- 1 heaped tsp of Dijon mustard
- 1 heaped tbs of chopped flat leaf parsley
Instructions
Preheat the oven to 220C/200C Fan/Gas 7
Heat a frying pan until hot, then add the olive oil and fry the pork chops on both sides until nicely caramelised.
Transfer to a baking tray and roast in the oven for about 4 minutes.
Leave to rest for 5 minutes before carving.
Add the shallot to the frying pan and fry until transparent.
Add the brandy and white wine to deglaze and reduce by half.
Add the stock and cook until reduced and thickened.
Add the shallot, capers, cornichons, dill and chives to the sauce and then stir in the mustard.
Set aside and keep warm.
Plate the rested pork chops and drizzle with the thickened sauce and serve
Notes
Sauce can me made in advance. If put into a sealed container will improve the flavour if kept in the fridge over night.
Wine Matching
Pork Chops with Butchers Sauce has some really strong flavours. An obvious choice here is a traditional Italian wine. Fattori Danieli Soave DOC 2016 is absolutely first rate with the rich dish.
