Pithivier

Our Almond and Brandy Pithivier is easy to make and  are great for nights in with friends and family. The recipe has been simplified and uses pre-made puff pastry to make it even easier to make. The use of a soup plate ( as a mould) helps to get the right shape and takes the frustration out of handling.

The pithivier is a round, domed pastry pie decorated with distinctive spiral markings drawn from the centre of the dish. This really makes a simple pie creative and stunning to serve.

Ingredients

  • 1 pack of frozen Puff Pastry, thawed
  • 100 g butter
  • 200 g Caster sugar
  • 200 g Ground almonds
  • 1 tbsp brandy
  • 4 Eating apples, peeled, cored and sliced. Caramelised in a little butter, sugar and lemon juice
  • Beaten egg to glaze
  • Icing sugar to glaze

Instructions

Preheat oven to 220°C/425°F/Gas Mark 7

Combine butter, sugar, almonds and brandy to a spreadable paste.

Place half the pastry in a rimmed soup bowl

Add the almond mixture in the centre of the pudding bowl making sure the rim is clear of mixture

Top with the apple slices

Brush the pastry border with some of the beaton egg

Add the "top" (the other half of the puff the puff pastry

make sure the edges are well sealed

Turn out the pastry onto a floured baking tray or onto slicone paper

Using your thumb and forefinger crimp the edges into a neat pie edge ) bit of a "faut plat". This will seal the pastry and avoid leakage of the filling.

Make crescent shaped cuts in the remaining pastry rounds, radiating out from centre.(about half a centre apart.

Bake in oven for 15 – 20 minutes until risen and golden.

Dredge tops with icing sugar and if desired caramelise under a hot grill or with a blow torch.

The recipe originates from the French town of the same name, a pithivier and can contain sweet or savoury fillings. Any savoury pie filling like Chicken and Bacon or a savoury mince works really well.
