Jammy Dodger Muffins

Jammy Dodger Muffins are a quick and easy way of making treats for the family. If you are like me you end up with lots of small quanitites of jam of various flavours clogging up the pantry. This is a great way to use these up and create some fun for the family. On my latest batch I made a selection featuring, Apricot, Rasberry, Blackcurrant, Blueberry and marmalade. The Marmalade was quite a hit with the adults as the tanginess of the filling complimented well with the sweetness.

A great way to use those irritating half pots of jam we all seem to collect.

Ingredients

  • 2 cups Self Raising Flour
  • 1 Pinch of Salt
  • 3 eggs
  • Half Cup Sunflower Oil
  • 1 Cup Fresh Cream or Greek Yogurt
  • 12 Tsp of Jam (basically one per muffin and can be many different varieties)
  • Half Cup Caster Sugar

Instructions

In a bowl sieve Flour, Sugar and Salt

In another bowl or jug whisk together the wet ingredients.

Add the wet mixture to the dry mixture and with a spoon and combine - Be careful not to over-mix or your muffins will be tough. A few figure eights with a metal spoon should do it.

Spoon into a greased muffin tin till you fill the muffin mould to halway

Add a teaspoon of jam to the centre

Top up the muffin mould with more mixture till they leavel with the top of the tin

- should make approximately 12 medium Muffins

Bake for 20 to 25 min in the oven at 350f or 180c

Notes

I like to use paper muffin cups as its less cleaning up to do as the jam can become sticky if it leaks out of the muffin.
