Coffee Muffins

Use coffee in your muffins to make them even tastier.If you love your coffee in the morning, you’ll be sure to love these coffee muffins. Use instant espresso granules for a more robust coffee flavour. You can use melted butter instead of the oil, if desired. You can also add 175g chocolate chips at the very end if you want a sweeter, more indulgent ‘mocha muffin’.

Caramello chocolate can be added to this recipe to add melty bits! If you want a for deliciously decadent edge, top with a lush cream cheese coffee icing.

For the perfect afternoon snack, nothing beats these homemade coffee muffins served warm, fresh out of the oven.

Ingredients

  • 2 cups Self Raising Flour
  • 1 Pinch of Salt
  • 3 eggs
  • Half Cup Sunflower Oil
  • 1 Cup Fresh Cream or Greek Yogurt
  • 2 tbs Instant coffee
  • Half Cup Caster Sugar
  • COFFEE ICING
  • 1 teaspoon instant coffee powder
  • 2 teaspoons boiling water
  • 1 cup (160g) icing sugar mixture
  • 1/2 cup of chopped walnuts (to sprinkle)

Instructions

In a bowl sieve Flour, Sugar and Salt

In another bowl or jug whisk together the wet ingredients.

Add the instant coffee and whisk again till dissolved

Add the wet mixture to the dry mixture and with a spoon and combine - Be careful not to over-mix or your muffins will be tough. A few figure eights with a metal spoon should do it.

Spoon into a greased muffin tin till you fill the muffin mould to just over halway and add caramello if using (skip this step if not using)

Top up the muffin mould with more mixture till they level with the top of the tin - should make approximately 12 medium Muffins

Bake for 20 to 25 min in the oven at 350f or 180c

To make the coffee icing, combine coffee and boiling water in a bowl. Add the icing sugar and stir to form a runny paste, adding more water if necessary. Drizzle over the muffins.

Sprinkle the chopped walnuts over the top

Serve warm or at room temperature.

Gluten Free

This recipe is very easy to change to a gluten free version. Just use gluten free flour,  and gluten free chocolate bars. Most instant coffee is gluten free but check the label.
