Chicken Limone

Chicken Limone is a  satisfying and tasty light meal. perfect for a summers evening, and most importantly, quick and easily prepared. Da Ciccò in Gualdo, Le Marche was a great favorite of ours. Theresa had been cooking for locals and tourists to the area for well over forty years. Chicken Breast Limone was popular particularly of the ladies who wanted to protect the waist-line from too much delicious pasta.

Luckily for us, before retiring, Theresa was kind enough to demonstrate her technique for preparing and cooking this fabulous dish.

Sautéed chicken breasts served with a lemon butter sauce and capers make a simple yet elegant meal that will make you feel like you are dining at your favorite restaurant.


  • 4 Skinless chicken breast pounded to a half inch thick schnitzel
  • ¼ cup plain flour
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 25 g butter chopped
  • 2 cloves garlic crushed and chopped
  • 2 tbsp drained baby capers
  • 2 Lemons zested and squeezed
  • ½ cup chopped fresh parsley



Place the chicken breast into a shall dish and squeeze the lemon juice over to marinade the chicken and set aside for 15 minutes. This will improve the flavor and ensure the chicken is nice and tender.


Coat chicken in flour seasoned with salt and pepper. Shake away excess.


Heat oil in a large, deep frying pan over medium heat. Add butter and garlic. When butter starts to foam, add chicken. Cook for 2 minutes on each side or until lightly browned.


Add capers and juice left from the marinade together with the Lemon Zest.


Simmer 2 minutes or until slightly thickened or until chicken is cooked through. Add the parsley and season to taste.


Serve chicken and spoon over the sauce.


Chicken Limone can be served with a nice mixed salad, your choice of pasta or simple steamed green vegetable.

Wine Matching

We chose a Rabbit & Spaghetti Clare Valley Riesling 2016 (may have been the name that attracted us) to serve with this dish. It’s Riesling, but perhaps not as you know it. This wine has been sourced from old vines in the Watervale sub-region of the Clare Valley. Think limes and grapefruit – perfect for summer and seafood. Available from Naked Wines
