Amberhall Fruit Cake

Amberhall Fruit Cake is a speciality served at a wonderful guest house I stay in Johannesburg. Elizabeth is from Sweden and is the most brilliant cook. She follows the European Breakfast tradition and serves a homemade cake or pastries on the the breakfast buffet.

Amberhall is not far from the hustle and bustle of the city. Set in large park like grounds so you feel you are in the middle of the African Bush. Most importantly, it has comfortable beds, fabulous bathrooms and an abundance of local birds who sing you awake. What a way to start the day.

Easy recipe to impress guests for Afternoon Tea, Morning Coffee or just as a healthy snack during the day.

Ingredients

  • 250 g butter
  • 50 ml of orange marmalade
  • 200 ml sugar
  • 3 eggs
  • 400 ml cake flour
  • 400 ml raisins
  • 100 g flaked almonds
  • Desiccated coconut for dusting

Instructions

Prepare the cake tin (capacity 2 litre); grease it and cover with desiccated coconut.

Melt the butter and stir in the orange marmalade.

Add sugar and then the eggs, one egg at a time and stir vigorously after each egg.

Mix in the flour, raisins and almonds.

Pour the batter into the cake tin and bake for about 70 - 80 minutes, 150°C.

Let the cake cool down and wrap in foil/plastic and leave it to “mature” for 2 days.

Cut into slices and dust with icing sugar before serving.

The original homestead was built in 1970 by the Italian builder Umberto Beccaro. He was an esteemed builder of many upmarket houses in Johannesburg. This was the house that he built for his own family. It always remained in the Beccaro family and in 2017 it underwent a full renovation to convert into an elegant Guesthouse providing luxury accommodation with a personal touch.
