Baby Marrow, Courgette, Zucchini this versatile vegetable has many names around the world. Sweet and Sour Courgette is a great dish to make and versatile too. Served cold as a salad or warm as a great accompaniment to lamb or chicken when you are looking for something more interesting as a side dish. It also works well as an anti-pasta with cold meats, olives and cheeses.
We discovered the dish at a little restaurant in Sicily in a small town called Agrigento where we visited the 5th Century BC Temple of Hera. The car had broken down just outside the hotel so we were stranded whilst it was repaired. Luckily there was a fabulous little restaurant serving local food just down the street. My, were we in for a spoiling.

It can be served cold as a salad or warm as a great accompaniment to lamb or chicken Soften the raisins in water for around ten minutes Cut the courgettes into strips or batons In a frying pan add the oil and bring to a medium heat Brown the crushed garlic and then add the courgettes and fry until they turn a golden colour Slowly pour in the vinegar then add the chopped anchovies. As soon as the anchovies start to dissolve add the raisins (having squeezed out the water). Add the pine nuts and the sugar. Mix well and cover the pan and place on a low heat for about 20 minutes. If the sauce starts to dry up and a little warm water. Serve either hot with roast lamb, pork or chicken or serve as a side salad with a barbecue Sweet and Sour Courgette

To be honest Sweet and Sour Courgette matches with any wine you are serving with your main course. We enjoyed a Fattori Danieli Soave DOC 2017. The best Suave grapes are grown in volcanic soil situated 150-200 metres above sea level. The very best grapes are hand-picked in the vineyards. The result is a beautiful straw colour wine, with hints of peach, pear, apricot and citrus fruits – elegant, fresh and balanced. Available from Naked Wines.
A Bit about Agrigento
Running through Agrigento’s medieval core is Via Atenea, an attractive strip lined with smart shops, trattorias and bars. Narrow alleyways wind upwards off the main street, past tightly packed palazzi (mansions) interspersed with historic churches. A good range of restaurants, cafes and accommodation make the town an excellent base to explore the nearby Valley of the Temples and good beaches further west along the coast.
