Having lived in an area we call undiscovered Italy, Le Marche province for a few years. We absolutely loved being there.  Apart from meeting some of the most amazing people we were exposed to the simple tradition of great Italian food. We enjoyed a decade living the Italian dream.  This.  of course, gave our friends from around the world a good excuse to come and stay with us.  They all enjoyed the wonderful countryside, majestic villages, and amazing food and wine. Some stayed for a week, others for a month and one actually stayed permanently!

We had friends visiting from Dubai some years ago. The first of many visits, they loved the area as much as we did. One evening we took them to visit the Basilica de St Nicholai in Tolentino to end off a full day of sight-seeing and outlet shopping.

As we left the Basilica I spotted a new restaurant that had opened on the other side of the Piazza,  Osteria D’Este.  What a fabulous surprise it turned out to be. We were greeted by Martina D’Este, sommelier and owner, we, therefore, knew we were in for a treat. Fantastic bread by Martina’s father, the baker, foods lovingly prepared by Mother, perfect wines chosen for us by Martina.  It looked like it was going to be a memorable evening.

The was a set menu. One of our guests spotted on the menu a dish, Green Beans Le Marche Style. She announced that she absolutely hated green beans and was going to ask for something else instead. Marina told her that the Green Beans were a speciality of her mothers so why didn’t she try them. As a result, she did and twenty minutes later there was not a Green Bean to be seen on our table as she had eaten the lot!

Green Beans Le Marche Style

We hope you enjoy the Green Beans Le Marche Style as much as she did. A really simple dish that is really easy to prepare.

Ingredients

  • 500 gms Green Beans
  • 1 Tbsp Olive Oil (We prefer Huille de Vie)
  • 2 Large Stalks Celery
  • 16 Cherry tomatoes
  • 1 Large pinch Sea Salt
  • Freshly Ground Black Pepper
  • 1 Knob Unsalted Butter

Instructions

Firstly, clean, wash and prepare your Green Beans

Then chop the Celery as finely as you can with a sharp knife – the slivers need to be as thinly sliced as possible

Slice the Cherry Tomatoes in half

Then add the Oil to a heavy frying pan and bring to hot heat.

Add the Celery and cook without coloring for a few minutes then add the washed beans (There should be enough water on the beans to create enough liquid to steam the vegetable and stop them burning.

After a few minutes add the tomatoes and cover with a lid to retain the steam.

Add the knob of butter which will give you a nice glaze to the Green Beans

Most Importantly, keep tossing and moving and then serve with a liberal sprinkling of salt and pepper.

Sit back and enjoy as much as our Dubai friend did.
