Recently my lovely wife and I went on a vacation in the Caribbean. The days were sunny and hot, looking for a cool refreshing libation, we found an amazing gin cucumber cocktail. I believe it was called “Cool as a Cucumber”. We and our friends returned to that bar too many times to count to enjoy a cool refreshing cucumber cocktail.
For those who don’t know, my wife’s birthday is next week and it is a big one. Not to be too indiscrete, but it ends in a zero. I designed this lovely version of that cucumber cocktail we had on our Caribbean vacation to enjoy at her birthday party. Every bit as amazing and refreshing as the original, enjoy on a warm day. Not too difficult in south Florida, where it is already in the mid-’90s (35c) every day. The second special birthday cocktail is the South Florida Tropical Tease, which has all the tropical flavours of Florida in one cooling drink.
Refreshing Cucumber Cocktail

Ingredients
- 1/3 cup of Cucumber Water
- 1 Jigger of dry gin
- 3/4 Jigger of St Germain elderflower liquor
- Juice of 1/2 lime
- 3/4 Jigger of simple syrup (Syrup of dissolved half sugar, half water)
- 5 Thick slices of cucumber
- Splash of club soda
- More cucumber, mint and lime for garnish
Instructions
Fill the Collins glass 3/4 with ice, then dump in a cocktail shaker.
Add all the ingredients except the club soda.
Shake 20-25 seconds.
Pour unstrained into the Collins glass.
Top with club soda, and stir gently.
Garnish with a cucumber and lime slice as well as a mint leaf on a cocktail pick and serve.
With a little planning ahead, you can have this amazing drink. The day before slice two fresh cucumbers into a large pitcher and fill with water, and refrigerate overnight. Serve this refreshing cucumber cocktail Tom Collins or iced tea glass, and think of summer birthdays and pool parties while you sip.
