One of our friends and followers was kind enough to send a photo of this Avocado dish when they went out for brunch in Southhampton, together with a list of ingredients. Thank you PH!

A Friend was staying the weekend and I needed a quick and easy dish for Sunday Breakfast to sustain body and soul for a full days sightseeing and shopping. This certainly did the trick.

Avocado, Rocket with Poached Egg

A quick and easy dish for Sunday Breakfast to sustain body and soul for a full days sightseeing and shopping. This certainly did the trick.

Ingredients

  • 8 Slices Spelt Sourdough (toasted) Any nice bread will do
  • 2 Whole Avocados (Peeled and thickly sliced)
  • 1 200 Tub Smooth Cream Cheese
  • 1 Handful Wild Rocket
  • 1 Drizzle Lemon balsamic
  • Half Lemon Squeezed
  • Salt and Pepper to taste
  • 4 Large Eggs Free range is best
  • 1 Tsp Apple Cider Vinegar For Poaching

Instructions

Slice and toast the Spelt Sourdough

Peel the Avocado and cut through the middle to remove the stone

Drench the Avocado with the lemon juice to stop it blackening

Slice the Avocado into thick slices ( Half Moon Shapes)

In a shallow frying pan add approx one inch of water, apple cider vinegar, and a little salt and bring to the boil.

When boiling nicely, crack eggs into the water and poach to the consistency you enjoy

When your eggs are poaching assemble the rest of the ingredients.

Smear the toast with the cream cheese

Top with avocado slices

Add your rocket on top

Drizzle with a little Lemon Balsamic

When your eggs are cooked pop on top of the rocket, sprinkle with pepper and serve
